White Truffle — The Diamond of Alba

A delicate shell of grand cru dark chocolate encloses a praline made from organic Tonda Gentile hazelnuts from the Langhe.

At its heart, we have incorporated 11% pure White Truffle from Alba (Tuber magnatum Pico), the most precious of truffles.

The tasting opens with a moment where the truffle appears like a whisper.
Then the sweetness of the praline unfolds, gradually revealing notes of honey, fresh butter, and delicately milky hazelnut. The white truffle returns, settles on the palate, and becomes almost floral, leaving behind the memory of a subtle and infinitely rare emotion.


Tasting Recommendations

The White Truffle reveals its full complexity at room temperature (16–18 °C).

It pairs beautifully with:

  • A fine white wine, whose mineral tension and buttery notes extend the white truffle

  • A Blanc de Blancs Champagne, which enhances the delicacy of the white truffle

  • A Sauternes, for a more voluptuous pairing of honey, hazelnut, and truffle

  • Vodka, served very lightly chilled, acting as an aromatic enhancer and allowing the truffle to fully express itself

  • A 100% Arabica espresso from Central America, lightly roasted

  • An Ethiopian filter coffee, whose floral and slightly citrus notes bring freshness without overpowering the truffle


Cocktail — “Blanc de Truffe”

Ingredients:

  • 8 cl Blanc de Blancs Champagne

  • 2 cl elderflower liqueur

  • 1 cl very light honey syrup

  • 1 dash saline solution (optional)

  • Lemon zest

Preparation:
Build directly in a flute and stir gently.

Pairing:
Finesse, floral notes, and perfect tension for the white truffle.
