Mauve runs against the grain of the rest of the collection: no praline, no hazelnut at its heart. Just an airy marshmallow set within a grand cru couverture. Sweetness lived in slow motion. To be served at the very end of a tasting, over a sweet wine or an aged rum.

Mauve calls for round, sensual pairings. The sweetness of the chocolate converses with residual sugars (sweet wines, dessert wines) or with vanilla-laced spirits. Avoid pronounced bitterness and overly taut bubbles.

One Larme Mauve ≈ 3 g. A lighter profile than the other recipes: the airy marshmallow replaces the praline, the heart is less rich in fat but naturally sweeter.
Mauve draws inspiration from the world of perfume, from floral delicacy and French sophistication. A creation conceived around sensuality and softness. The recipe that proves a chocolate house can also know how to fall silent.
Keep away from light and heat. Best enjoyed within 6 to 8 weeks, stored between 18 and 20 °C.
