Mauve is our only recipe without praline. At its heart, an airy bourbon vanilla marshmallow. Around it, the grand cru dark couverture, as everywhere else. A house that masters the hazelnut must also know how to do its opposite.

Mauve runs against the grain of the rest of the collection: no praline, no hazelnut at its heart. Just an airy marshmallow set within a grand cru couverture. Sweetness lived in slow motion. To be served at the very end of a tasting, over a sweet wine or an aged rum.

Mauve calls for round, sensual pairings. The sweetness of the chocolate converses with residual sugars (sweet wines, dessert wines) or with vanilla-laced spirits. Avoid pronounced bitterness and overly taut bubbles.
