At the heart of the Belbo Valley, the village of Cravanzana cultivates the Tonda Gentile Trilobata PGI — recognised by chefs and chocolatiers as the finest hazelnut in the world. Round calibre, skin that releases after roasting, a finish with notes of browned butter and dried almond.
A hundred or so goats graze freely around the hazelnut trees. They naturally trim the undergrowth, fertilise the soil, keep pests at bay. No tractor, no weedkiller. Nature regulates itself.
All the raw materials are certified organic: hazelnut, cocoa, raw cane sugar. Nothing else.
No preservatives, no emulsifiers. A fine film of oil may rise to the surface: it is the signature of a pure paste. Stir before the first tasting.
